Cut 2 pounds of lamb leg steaks into 1 inch cubes.
Roll the cubes in Olive oils and lots of salt and pepper.
Sear cubes at a very, very high heat in Olive oil in a frypan.
Add lots of chopped Garlic and Rosemary.
Pour in 1/3 bottle of fine New Zealand red wine.
Simmer hard on medium to high heat for 10 mins.
Add 2 cups chopped Shitake (or other) mushrooms and simmer for another 5 mins.
Serve with Egg Fettucine
