Crab and Watercress Soup


Saute one very finely chopped Onion in Canola Oil in a large saucepan.
Add 1Kg Crab meat and saute lightly for 3-5 mins.
Add 3 tablespoons Soy Sauce and 1/4 teaspoon finely chopped Ginger or Ginger paste (I reckon you could also try some red hot chilli peppers too).
Add 2-3 cups of water and a large bunch of rinsed and chopped Watercress.
Simmer for at least 45 mins adding more water if needed.

Just before serving the soup, add a couple of handfuls of freshly chopped watercress.
