Cut 1Kg of Chicken Breasts into large chunks.
Heat 4 tablespoons Olive Oil in a large saucepan till it just begins to smoke.
Add the Chiken and cook on high heat until it is well browned on the outside
then take out the Chicken and set aside.
Add a little more oil if required and two chopped Red Onions, and 3 cloves
Garlic - saute for 5-10 mins.
Add 1/2 each chopped Red, Green, and Yellow Bell Peppers and fry for a couple of
minutes.
Add back the Chicken and one can Coconut Cream and a good handful of chopped
Coriander (Cilantro).
Simmer for 15 mins or more.
Add some fresh chopped Coriander just before serving.
Serve on Pasta or Basmati Rice.
