This recipe which is for an Avocado Butter to spread on BBQ'd Salmon Steaks came from Marie Rodwell.
Just cook some Salmon steaks on the BBQ. The thicker the steaks the better and cook them so they're still raw inside.
Mash the meat from two ripe Avocados with 1 tablespoon Lemon Juice.
Cream together 100gm unsalted butter and 1 clove crushed Garlic.
Blend these two ingredients together, add Tabasco Sauce to taste and season with
Sea Salt and cracked Pepper.
Spoon generous quantities of the Avocado butter over the BBQ'd Salmon Steaks.
